Frédéric Simond's menus which features the best available seasonal ingredients, changes regularly. Using vegetables from his own garden and products from the following local producers : meats from the Boucherie de Sévery, dairies from Laiterie de Montricher, Pampigny and l'Isle, tomatoes, asparagus and strawberries from Vullierens, potatoes from Terre de Papmigny, veal from Montricher, virgin oils from Moulin de Sévery and locally catched fish from de Léman lake.
